This creamy coconut pudding is a delicious and simple dessert that combines the sweetness of coconut with a smooth texture.

Ingredients

  • 400 ml coconut milk
  • 100 ml milk
  • 100 g sugar
  • 40 g cornstarch
  • 1 pinch of salt
  • 1 tsp vanilla extract
  • 100 g shredded coconut

Instructions

  1. In a saucepan, combine coconut milk, milk, sugar, and salt. Stir well.
  2. In a separate bowl, mix cornstarch with a little cold water to make a slurry.
  3. Heat the saucepan over medium heat until the mixture starts to simmer, then stir in the cornstarch slurry.
  4. Continue stirring until the pudding thickens, about 5-7 minutes.
  5. Remove from heat and stir in vanilla extract and shredded coconut.
  6. Pour the pudding into serving dishes and let it cool before refrigerating for at least 2 hours.
  7. Serve chilled, optionally topped with extra shredded coconut.

Notes

  • This pudding can be served with fruit or whipped cream for added flavor.
  • Use a gentle heat to avoid burning the pudding.
