- 400 ml coconut milk
- 100 ml milk
- 100 g sugar
- 40 g cornstarch
- 1 pinch of salt
- 1 tsp vanilla extract
- 100 g shredded coconut
- In a saucepan, combine coconut milk, milk, sugar, and salt. Stir well.
- In a separate bowl, mix cornstarch with a little cold water to make a slurry.
- Heat the saucepan over medium heat until the mixture starts to simmer, then stir in the cornstarch slurry.
- Continue stirring until the pudding thickens, about 5-7 minutes.
- Remove from heat and stir in vanilla extract and shredded coconut.
- Pour the pudding into serving dishes and let it cool before refrigerating for at least 2 hours.
- Serve chilled, optionally topped with extra shredded coconut.
